Hello friends! Last week, I made Mei and soot sprites from the Miyazaki movie My Neighbor Totoro .My daughter loved the soot sprites that were made of black rice. I am so happy that she loved the rice balls because this dark beauty is very nutritious and healthy. It contains great amounts of fiber, protein, iron and is naturally gluten free. I also made some mini pancake muffins, which my little guy really liked. Those little things are so cute and easy to make and you can eat them for breakfast or for a quick snack. I made so many that I froze some, I think my son likes the frozen ones even more than the thawed ones. The recipe is shown below, I hope you like it.

RECIPE: Mini Pancake Muffins
(Yield 28 – 30 mini muffins)

Pancake mix: 2 Cups
Milk : 1 Cup
Eggs: 2
Coconut palm sugar: 4 Tablespoons
Maple syrup: 1 Tablespoon
Unsweetened sheded coconut: 1 Tablespoon


1. Add all the ingredients in a mixing cup, mix well.

2. Preheat oven to 350° F. And brush mini muffin tin with oil.( I used coconut oil).

3.Fill the tin.

4. Bake about 13 minutes or until a toothpick comes out clean.

5. Allow the muffins to cool for 5 minutes in the muffin tin,then transfer the muffins to a plate. Serve with maple syrup or butter.
